This versatile recipe can be prepared with chicken OR turkey meat and can be served on a bed of rice OR noodles. The choice is yours! ;)
This plate's beautiful colors are eye appealing and it's delicious flavor are sure to win over your palate. 
The heat level is considered medium, you can add or reduce the chili to your desired level of spiciness. 
The dish you see in this post's picture were prepared using turkey breast. 

Easy Stir Fry

Preparation time: 40 minutes
Yield: 4 Portions

Ingredients
  • 500g Turkey or chicken breast (cut in 2 cm dices)
  • 1 Red Pepper 
  • 1 Yellow Pepper 
  • 1 Cup green beans
  • 1 Cup carrots
  • 1 Medium onion
  • 1 Large garlic clove
  • 1 tsp Chopped or grated ginger
  • 3 tbsp Vegetable oil
  • 1 tbsp Flour
  • 3 tbsp Soy sauce
  • 1/2 Cup chicken or vegetable stock
  • 1/2 Large chili
  • 1 tsp Sugar
  • 1/3 Cup of unsalted peanuts
  • Optional: Chopped cilantro

Start by cutting the peppers and onions in large dices. Slice the carrots into a thickness of 2mm and trim the green beans. If green beans are too long, cut them so they are no longer than 5 cm. Chop the garlic and ginger and slice the chili.

If you have not purchased pre-diced meat, it's better to cut it after all vegetables have been prepared. Dust the diced meat with the 1 tbsp of flour. 

Heat the oil in a skillet or wok over to high heat. Add your meat and stir-fry (or saute) until it has gained some color. Then add the sugar, onion and carrots. When onions have softened a bit, add garlic, ginger, chili, peppers and beans. Continue to stir for about 2 more minutes, until the color of the beans and peppers are brightened. Add soy sauce and stock. Cook it for a couple of more minutes until the sauce has somewhat thickened. Turn off the heat and add the peanuts.

 Tips:
- I find it better to leave the meat still for a couple of minutes in the skillet until it has developed some color and detaches itself easily from the pan (if not using a non-stick pan). I also find that this process contributes to the flavor development. 
- You can toast the peanuts on a skillet before adding them to the dish for an extra boost of flavor.
